Pizza recipe

Great pizza recipe that can be made at home oven.

Dough:

  1. 500ml warm water
  2. tbsp of sugar
  3. 2 grams of active dry yeast AND a tbsp of sourdough starter
  4. 20 ml truffle olive oil (regular is fine as well)
  5. 15g of salt
  6. 600g bread flour, plus more for working the dough (about 700g total for type 650, 750g for type 00)
  7. additional oil for greasing the dough
  8. whole wheat flour for dusting the pizza peel

Sauce - just blend them all in:

  1. A can of crushed tomatoes
  2. 40ml of olive oil
  3. tsp (4g) sugar
  4. Oregano
  5. Smoked paprika
  6. Garlic (optionally)

A block of freshly grated low-moisture mozzarella, some parmesan, salami, basil, sausage - whatever you like to put on pizza

Combine water, sugar and yeast (with sourdough starter) in a large bowl. If you see bubbles, it means the yeast is alive. Add 600g of bread flour, salt and olive oil. Mix to get everything hydrated and start kneading. Add flour if dough is sticky, but as little as possible. Knead until you can form a thin layer without tearing it.

Divide dough into 4 equal balls and put them in four plastic or glass containers. Add a tiny bit of olive oil to stop dough sticking to containers. Put them in the fridge at least overnight - it can stay in the fridge for up to 10 days.

Put the pizza stone (or steel for low temperatures) on the high rack position and preheat for 40 minutes.

Dust the pizza peel with whole wheat flour (other flour works as well). Take the cold dough out of the fridge and knead for 1 minute. Start poking it with fingers to create pizza bubbles. Then stretch it to the widest size that will fit the stone.

There are two options for baking the pizza. If you have a pizza oven that can go over 400oC then you simply put all ingredients and bake the pie. If you got a standard oven, that can only go up to 250-270oC you need to bake into two phases. Firstly, put all ingredients into the fridge to create the greatest temperature difference. Bake dough with the sauce for 5-10mins. When it’s brown, take it out and put cheese and other extras. Bake until the cheese melts.
